haha- no i dont think you could knit one handed. i did manage to clear out and organize my yarn stash one handed tho. ;) but what i can do now is brush my teeth with my left hand while doing some other morning task with my right. pre broken right hand, i never ever would have thought i could learn to do stuff with my non dominant hand. :) Just wait- you'll be able to amaze your frends with your ambidexterity!
